This time of year, our office usually spends a lot of time talking about serious topics; deadlines, paperwork, and the stress that often comes with financial uncertainty. However, just like the court system slows down a bit around the holidays, we think it’s important to pause, breathe, and enjoy the season!
So today, we are taking a short break from bankruptcy to share something that brings a little joy every December: a tried-and-true Christmas cookie truffle recipe that never fails to be delicious! It is also a perfect way to use up any left-over cookies after the 25th.
The holidays can be tough, especially if you’re dealing with financial stress or considering bankruptcy. While treats won’t fix everything, small moments of comfort like baking with family or sharing goodies with friends, can make the season feel a little lighter. Honestly, sometimes joy looks like cream cheese, sugar, and crispy chocolate-y coating.
Christmas Cookie Truffles:
Ingredients:
- 12-15 sugar cookies (These can be pre-made or homemade, but you want them on the dry side)
- 2-3 ounces softened cream cheese
- ½ teaspoon vanilla extract
- 1 ½ cups chocolate for melting (Dark chocolate pairs very well!)
Instructions:
- Use a blender or food processor and pulse the cookies until they have turned into fine crumbs.
- Add in the cream cheese and vanilla and pulse until it has combined. It the mixture isn’t coming together because it is too dry, you can add in an extra ounce of cream cheese.
- Line a baking sheet with parchment. Using a small cookie scoop or tablespoon, scoop out the dough and roll into balls and place onto the baking sheet. Freeze until firm – typically about 30 minutes or so.
- Melt the chocolate in a microwave bowl for 1 minute. (feel free to add a small amount of coconut oil if needed, but not too much or the chocolate will not set.)
- Dip the truffle balls into the chocolate using a fork or a toothpick stuck through the top of the truffle, then place back onto the lined sheet.
- Add sprinkles immediately after dipping each ball. Place in the refrigerator until ready to serve.
Bonus Tip: You can also press the cookie mixture into one layer into the lined pan and pour the chocolate on top to make truffle bars!
